Bacillus cereus bacteria, coloured scanning electron micrograph (SEM). B. cereus is a Gram positive, spore forming bacteria found in soil. It produces two toxins that cause foodborne illnesses. One causes diarrhoea 8 to 16 hours after ingestion, the other vomiting and nausea between 1 and 5 hours after ingestion. The latter toxin is particularly prevalent on rice that has been cooked and then improperly refrigerated. The bacterial spores survive and germinate, leading to illness after consumption.
