The Bhut jolokia (Capsicum chinense), which originates from Assam in India, is one of the world's hottest chillies, with a Scoville rating in excess of one million SHUs (Scoville Heat Units). By comparison, a Jalapeno chili is rated at between 2500 and 5000 SHUs, a Bird's eye chilli at between 100,000 and 225,000 SHUs, and a Scotch bonnet at between 100,000 and 325,000 SHUs. Tabasco pepper sauce comes in at about 3500 SHUs. Pure capsaicin (the heat-producing chemical in chillies) is rated at 16 million SHUs. The Bhut jolokia has many names, depending on where it is grown. These include: Bih jolokia; Bhout jolokia; Borbih jolokia; Naga jolokia; Nagahari; Naga morich; Raja mirchi; red naga chili; Ghost chilli; Ghost naga; Nai miris; Saga jolika; Indian mystery chili; Indian rough chili; Tezpur chili; Umorok; Dorset naga.
