Series about vegan Gado Gado salad. This salad is both easy to make and adaptable to ingredients you have around. Here we used, cos lettuce, cucumber, radish and carrot in their raw state. The tenderstem broccoli, green beans, beansprouts and sweetcorn are briefly stir fried in a little hot oil before serving with torn coriander leaves tossed over the top. To make the peanut dipping sauce, blend together 75g peanut butter, 2 tbsp soy sauce, 1 tbsp maple syrup, 2tbsp lime juice (1/2 lime), 1 garlic clove, 1 deseeded chilli, 100ml coconut milk, 1 tsp tarmind paste.
