The candles are cooked in the samemanner as the pineapple slices, canned, and shipped to NewYork, where they are used in the glace fruit industry. The pineapple juice was formerly allowed to go to waste inlarge quantities. At present more attention is paid to the pres-ervation of this material. Some of the canneries offer a bottledpineapple juice, which has been merely sterilized by heat andfiltered and is otherwise unmodified. This product for themost part, however, does not have a very agreeable flavor and. Papaya Tree in Miami, Flokida FRUITS AND NUTS 101 does not make a very strong place for itself on the a pineapple juice prepared in Cuba appears to be ofmore promise. One firm in Honolulu prepares a condensedpineapple sirup to which some cane sugar has been added, andthis sirup is used for carbonating at soda fountains. A verypalatable drink can be obtained in this way. On account ofthe large amount of sugar contained in pineapple juice, a planthas recently been erected in Honolulu for condensing this juiceinto a sirup to be used in increasing the sugar content of cannedpineapples for the trade which requires additional sugar. Thefiber of the pineapple leaf has been used for various purposesand a discussion of its economic value will be found underfibers. Moreover, the stumps are filled with starch and couldpossibly be used as a comm
