Fritters that have been made from a ballan wrasse, Labrus Bergylta, that was caught on rod and line boat fishing in the English Channel. The chopped wrasse has been combined with plain flour, fresh thyme, sweetcorn, diced onion, diced red chillies, sliced spring onions, salt, pepper and water. The fritters have then been fried in sunflower oil and garnished with fresh thyme. Ballan wrasse are not generally eaten in the UK though there are concerns for their numbers as they are being caught to be placed in salmon farms to eat sea lice that affect the salmon.
