A homemade venison dish comprising of roe deer saddle fillet, or backstrap, that has been wrapped in Spanish Serrano ham and flash fried to keep it rare and then sliced. It is served with butter that has been flavoured with sun dried tomatoes, fresh basil and grated parmesan cheese.
