This is done by gathering the leaves together and tying with yarn or raffia to exclude the light and air from the inner leaves which must be done when quite dry or they will rot. Another method is to cover the plants with boards or slats. In three or four weeks they will be blanched. After a shower the boards must be taken off or the plants untied, to allow drying. Finnochio or Florence Fennel 418 A desirable vegetable ex- tensively used in Italy as a salad, or served boiled, with a cream dressing. When the base is about the size of a hen's egg earth up to cover half of it. In about ten days cut for use. Pkt. 10c; oz. 25c; \ lb. 75c.
