(© Fernando Camacho/ Norte Photo) El Mole prieto es un platillo típico de la región Nahuatl del estado de Tlaxcala, donde este es elaborado en fiestas patronales y fiestas del pueblo de las comunidades del municipio de Santa Ana Chiautempan, en el estado de Tlaxcala en México. La particularidad de este platillo es su proceso de elaboración, donde piezas de la carne del cerdo son cocidas en un enorme cazo para que ahi suelten su sabor y jugos para posteriormente agregar los ingredientes molidos y una buena porción de maíz molido y quebrado, para darle esa textura espesa tan característica del MOLE PRIETO. Este es acompañado con trozos de carne de cerdo de las distintas partes de este, que le da un sabor muy especial; es servido en un molcajete de barro para que conserve su temperatura y su textura espesa.
