Illustration showing the tertiary structure of the enzyme lysozyme. The tertiary structure is the final three dimensional shape of the protein. Alpha helices (green) and a beta pleated sheet (orange) are secondary structures formed from the protein's polypeptide chain of amino acids. Lysozyme is a widely distributed protein in human bodily fluids, including tears and saliva. It is also found in egg white and plant latex. Lysozyme disrupts the polysaccharide components of bacterial cell walls, leaving them susceptible to destruction.
